Historically, we used 24 words for the Trezor Model One, where you had to enter backup words to the desktop (in the randomized order suggested by Trezor, so it was still secure) to increase security. Later, we introduced the Trezor Model T with a touchscreen, which allowed you to enter words directly on the Trezor, so 12 words became the way to go.
